Our charming niece, Mikayla is staying with us while she attends a nearby college. She has carved two pumpkins and I've turned the seeds into tasty, spicy snacks. I melted about 2 T of butter on a large cookie sheet, and added 2 T of chili powder, 1/2 tsp. of Kashmiri chili powder, 1/2 tsp of cumin and 1 tsp of mexican chili powder and a couple pinches of salt. I mixed the spices and butter, then added the pumpkin seeds and stirred till everything looked coated. Bake them for 30-40 minutes at 350, stirring and shaking the pan about every 15 minutes. We like them so much, we're planning on looking for closeout pumpkins tomorrow.
