Oven Baked Potatoes

These tasty and easy to prepared baked potato wedges are a family favorite.  We toss them on the top rack of the oven while the bread is baking. 

Oven Baked Potatoes

Yukon Gold potatoes, washed, unpeeled and cut into bite size wedges
1 tsp fresh thyme leaves
1 tsp dried basil
1/4 tsp. cayenne pepper
3 T Olive or grapeseed oil
3-6 minced garlic cloves 

Fill your cast iron skillet with potato wedges, add the olive oil, minced garlic, thyme and basil.  Salt and pepper to your taste.  Toss and stir very well until all the surfaces of the potatoes are coated with oil.  Then cook at 425 on top rack of oven, 45-60 minutes until golden brown.  We don't stir the potatoes while cooking.
