Seafood Risotto

My first successful risotto, Thank You Ari
I've never made a good risotto before.  Our friends Evan and Ari, prepared a magnificent seafood risotto for us this summer.  Ari kindly sent me the recipe, and mine was a hit, almost as tasty as hers.  This Emeril Lagasse recipe turned out wonderful and it was easy to make.  We used Trader Joe's chicken stock instead of the seafood stock.  Trader's Joe's also carries the Arborio rice in a one pound bag.  With extra guests we added an extra pound of seafood to the recipe, to good results.  This is pretty easy to make, just takes lots of stirring, make sure risotto is done or almost done before adding seafood.
