Beef Stir Fry


Beef Stir Fry
1 bunch green onions
1 yellow onion
1 yellow pepper
1 small bunch Bok Choy
3 stalks celery
2 tomatoes
5 garlic cloves
1 child's size fist of ginger, thinly sliced or grated
1 1/2 pounds thinly sliced chuck steak (fat, gristle removed)
4 Tsp corn starch
4T Soy sauce
1 chicken bouillon cube
1 vegetarian boullion cube
1 T oyster sauce
1/2 cup water

Slice up the beef against the grain and add it to a small bowl with 3 tsp cornstarch, 2 garlic cloves minced, the ginger and  3 T soy sauce .  Mix well and allow to marinate while you slice up the vegetables.   Mix 1/2 cup water with 1 T soy sauce, the bouillon cubes, 1 finely minced garlic clove and 1 T oyster sauce, heat in microwave for one minute, stir, heat for 30 more seconds, stir and set aside.  Microwaves vary, you want to continue heating (30 seconds) and stirring until the sauce mixture changes color from white to brown.  Heat 3 T of grape seed oil with 2 crushed garlic cloves, remove the garlic when its brown, and stir fry the meat in small batches just until the beef slices change colors from red to brown.   Add a couple more T of oil to the wok and fry the Bok Choy and yellow onion for a couple of minutes, then add the celery cook another minute then add the pepper and green onions, stir fry one more minute and then add the warm sauce mixture, meat and tomatoes cook one more minute then serve.
