Yellow Split Peas With Zucchini

Princely  Curry

1 cup yellow split peas washed

1/2 tsp. salt
1/2 tsp Turmeric
2 cups water
1-2 Tablespoons olive oil
1/2 tsp cumin
1/2 " piece ginger minced
2 garlic cloves
1 cup chopped onion
1 zucchini chopped
1 tomato chopped
1/4 tsp cayenne pepper
1/2 tsp garam Masala
1 teaspoon mango powder

2 T cilantro diced
1 tsp. lemon juice

combine split peas, salt and turmeric bring to a boil and then simmer 20-25 minutes.
saute onions, garlic and cumin for 8 minutes
add tomatoes cook an additional 5 minutes
add spices cook 2 more minutes
add split peas and any remaining liquid, simmer for 10 minutes
add lemon juice and fresh cilantro, serve with flour tortillas or chapatis

This is my staple Indian recipe, been making it for years and have no idea where I got it.  I think this tastes a little better with yellow split peas than yellow chana Dahl, but have used both to great results.  Serve this with Green Chili Pickle, Mango Chutney and sweet and sour Lime Pickle, its a meal fit for a king or queen.
