Originally, this main dish recipe came from my friend Jay. But we like it so much we cook it as a side dish. This is 1 onion, sliced thin, 5 medium thinly sliced potatoes and 1 sliced green pepper and 2 broadly sliced and seeded jalapenos. Toss with some olive oil and fresh thyme, then roast in a 425 oven for 30 minutes. Then we toss and stir, and add sliced tomatoes and shredded cheese (this is gruyere) and then roast for another 5 or 6 minutes. When we cook this as a main dish we add 1 or 2 packages of thinly sliced Hillshire smoked sausage, or Kielbasa.
