I love making this cheesecake!  We enjoyed the chocolate crust on the last cheesecake so I tried it again.  The chocolate grahams were definitely not as dark as the chocolate wafers we mixed into the crust in our last cheesecake.  So I added a couple of tablespoons of cocoa to the dry crumbs and mixed it up before adding the butter.  The results were very similar to the chocolate wafer result and a lot less expensive.  The Famous Chocolate Wafers were almost 5 dollars.   The recipe is here.  At Trader Joe's I found cream cheese with 1/2 the fat and low fat sour cream which we'll try in our next cheesecake.  I'll be sure to let you know how it turns out.
